There is a point in the behind the scenes stuff where they are talking about some crew member named Billy, who bit a guy and would do this thing where he put a measuring tape in your face, or something like that. Got me thinking about the Billy stuff maybe being an inside joke in relation to that.
What are your tidbits?
If we are to assume that we end up in a mixture of our reality (the house isn't owned by the Palmers it is owned by the real life owners the Reber's yet their name is Tremond which is associated with some interesting characters in Twin Peaks) and Richard/Cooper goes to a Valero gas station (real in our world) the Odessa Population sign and deep fried weapons...then the theory that the Billy is actually Billy Zane who played her lover in Season 2 has a LOT of merit. You will note that his name is Billy Zane, not Bill or William.
This is a theory that I can buy into!

I would add the part when Cooper (Richard) asks the waitress where to put the fryer basket. Oddly awkward. And oddly prolonged. It felt more like a regular guy doing a real thing instead of some edited-for-TV hero sequence.
