In an attempt to create it's own observation, I offer up the topic of Phillip Jeffries.
Towards the end, Cooper approaches Phillip. Phillip is now in the form of a machine (tea kettle).
The dialogue goes like this:
Phillip: Please, be specific.
Cooper: The date February 23, 1989.
Phillip: I'll find it for you. It's slippery in here. It's good to see you again, Cooper. Say hello to Gordon if you see him. He'll remember the unofficial version.
To the viewer, the only other time we are aware that Phillip ever saw Cooper was back in FWWM when he asked; "Who do you think this is there?" , however in Season 3, Cole and Albert remember him as saying "Who do you think that is there?"
Okay, so it's subtle, going from 'this' to 'that'. Now, after watching the Missing Pieces, we know that both of those terms were used (alternate takes) back when FWWM was filmed. We also know that Bowie's vocals were dubbed in the Return (but that's not the point here).
The focus in on the difference of terms, which I'll get back to in a moment.
The second element to what Phillip says is to say hi to Gordon and that he will remember the unofficial version.
From this point we see Cooper go back in time and save Laura, go to Odessa and find Carrie, etc. We never get a chance to see Cooper meet Gordon and tell him "Hi" from Phillip, however... We get a general feeling that Phillip is now somehow "over" time; transcending it so he may very well be able to see all time lines and unofficial versions.
I read through many articles online and some posts here on these forums about the "unofficial version" and they all came to the conclusion that the official version is the new timeline that Cooper created by saving Laura. What if.. OUR Twin Peaks, what we know as Season 1 and Season 2 and FWWM IS the official version?
Back to the difference in terms; "this" vs "that".
'This' is the evidence needed to determine the official vs unofficial version.
'This' is used in FWWM. 'That' is used in Season 3, and is shown to us as a memory (Gordon will remember the unofficial version). Evidence tells us that what we know as Season1, 2, and FWWM is the official version but that Gordon is remembering things from the alternate timeline.
To fully prove this, however, I'd need to show evidence that other parts of Season 3 took place out of order (meaning that elements in it happen as a direct result of Cooper going back in time - other than the final episode). We have come close a few times, but the main thing going against this theory is that Mark Frost has stated that the only time altering elements happened in the final episode.
Anyways, this is my new observation of Phillip Jeffries.

To go along with Lucas, he never said the only "Time altering elements happened...."
There are a few examples I can think and probably several others that I haven't even noticed where things have occurred "out of order." But they weren't necessarily out of order as they possibly were different "versions" of reality.
As for this/that.....it has been much pondered, debated, and argued. I'm not convinced that it is a key to anything as it was just a different word from a 25 year old memory. I'm open to the possibility of it meaning more, buuuuuuutttttttt........................ yeah I just don't know.
I must admit I subscribe to the theory that the official version is the altered timeline and Gordon will remember the unofficial version because he'll remember things before they changed. Maybe this is why he sees Laura when he opens his hotel door.
The lines I find most disconcerting in that exchange is when Jeffries says "There may be someone...did you ask me this?" Is he referring to an alternate timeline where Coop has been here before? Mr C? There maybe someone what?
Also interesting to note that the lever Naido pulls on top of the cube in space in Part 3 is attached to a Jeffries-like kettle-type object.
