I'm beginning to think that Audrey is dead, and she's only gonna appear in the last episode(s) in the red room. Just like Laura, we only saw her once
I think this is more like the Dougie thing. Frost and Lynch know their fan base is dying to see Coop and her so they keep teasing and delaying things to entice both the trip and the final occurrence. Not too unlike his over use (at least in my mind) of dead space events like the floor sweeping.
I hope she's in more than just a few token scenes. She was always one of my favorite characters.

I remember getting a little thrill when Leland popped up in the finale. It had been so long since he had been killed off, not just in the # of episodes but there were also scheduling delays and hiatuses. It seemed to take forever before the final few eps were shown.

Can anyone remember the UK scheduling? I can't remember any pauses towards the end of series 2, but then again I can't even remember a gap between series 1 and 2.
It is assumed Audrey is Richard Horne's mother (the only fertile and known female from the Hornes by the time Richard was born). It was said that Audrey fell in coma after the yacht explosion, but it is not explained yet if she overcame it or not. Audrey's actress was listed in 2016 as part of Twin Peaks the return cast, so she is expected to appear.
But as you said, like good Coop, she is one of the most remarkable character from the old TP. Fan base are looking forward to watching her. Maybe its new debut won't be as we expect, as the new series is a new twist.

Maybe she's been horribly disfigured and living in the walls of the GN spying on people.
I'd like to think that the knowledge of what her son turned out to be and possibly the shock that Cooper did what he did to her (presumably she's not aware of the events of him going into the Lodge) drove her away from Twin Peaks because she couldn't deal with the memories of Cooper. Perhaps she might show up in Vegas and bring Coop back, then he explains what happened and they return to Twin Peaks. But I'm getting ahead of myself.

There were unconfirmed rumors that Sherilyn Fenn only shot a few scenes for "The Return" and even those were cut further during the editing stages.
She's certainly not very happy with her "Return" appearances, which might have contributed to a number of Twitter rant incidents like this one:
I'm actually really disappointed that I haven't gotten any Audrey scenes .. she was always my favorite .. I think that has been the biggest let down for me about the return .. ??
