I noticed this drawing came after a couple of torn off corners.  Maybe his third attempt of the night? 

I'm wondering if it's significant that he saw Laura immediately after.  And then didn't say anything. Gordon seems to be tuned into much more than he seems.  The subject of the drawing doesn't seem connected to anything we've seen but it does seem like very predatory (arm)/prey (elk?) imagery.  Maybe he's thinking about their unseen enemy.  Maybe this is him worrying about Diane.  So many maybe's!

To me the dots are representing the clues in this mystery, the arm is simply Gordon himself carrying one of the dots, and the deer is the one he is trying to catch (the symbol for the city Twin Peaks I think).

My first thought when seeing this was the Giant. very large appendage and its in a dress shirt.

Also the imagery of "the arm" comes to mind
