Szymons has a bold dark Z. I can't help but think of the Z on the coffee cups Tracey has when she visits Sam. Anyone one else have any thoughts about the strange name Szymons?
Only really that Symond, spelled without a z is a surname, which derives from Simon.

I'm assuming the s at the end just means that it belongs to the Szymon family, like, "Szymon's," but I don't remember if it had an apostrophe or not.
The name of the shop is 'Szymon's Famous Coffees' and it's where people working at Lucky7Insurance get their beverages from. The name of the shop was already readable on the cups in previous episodes.
And yeah, I'd say the 'z' is a clear reference to the zig-zaggy floor pattern of the waiting room, not unlike the Z on Tracey and Sam's cups.
Also the Szymon name kinda reminds me of Simon the Magician, but that's just speculation.
I am assuming this is where Coop got the cherry pie since Mike led him to it. I would love to see the scene of him picking it out.
I thought it was meant to sound like Jazzman's the coffee shop in college campuses.
The emphasis on the Z. It can be said now that it is the same coffee shop that Tracey went to.
To add to that you can see the glass case for pastry right after Mike disappears. One of my big wonders is when did Coop get the pie and why. I think Mike led coop there. I suspect there may have been a scene like in the Casino where Coop ends up pointing at the cherry pie.

Szymon isn't an uncommon name in and around Sheffield, where a lot of Polish families located after the war.
It's a coffee shop. And the 'O' on the sign really looks like a pie to me. 😀

I read a theory about how Mike can control dreams...similar to how he appears in Coop's dreams in season 1-2.
Therefore, it was Mike controlling the Mitchem brother's very specific dream and that cherry pie factor was also included by Mike.
Then all mike needs to do is appear at the Syzmon's bakery and direct dougie to choose the right pie, most likely how he saw the slot machines which were also controlled by Mike/red room.
So the question remains tho, why do Mike and the Arm want Dougie Coop to help the Mitchem's?
Some type of love/goodwill scenario I assume.
They don't want the doppleganger out. Coop needs to survive for Bad Coop to go back. Though I am wondering if Mike is the one on the device that said "so I can be with Bob again" so the intent may not be "good".
