Once upon a time I would have said Dune, but that's getting the film treatment now.
For me, I'd love to see Stephen Baxter's Vacuum Diagrams made into a TV series, directed by someone who can handle such deep matter without copping out.
Always wanted to see Y the last man done and it's been threatened a few times but never happened
I'd like to see Iain Banks' Whit made into a series, or The Bridge, even though the basic plot was stolen by Life on Mars.
Any of his Culture novels would be great on screen but they need a large movie budget to do them justice.
"The Chronicles of Thomas Covenant" by Stephen R. Donaldson
"The Chronicles of Thomas Covenant" by Stephen R. Donaldson
That'd make for one hell of a long, long series; hardly the soul of Brevity, is our Mr Donaldson. "The One Tree" would make riveting viewing. I think I'd rather be riveting.
In fact, I think I'd rather be riveted. 😉
Jasper Fforde's Thursday Next series. Though I'm always a bit concerned that I won't like tv/film versions. And I'm not sure who they would get to play Pickwick the Dodo...
I know it's just one book & not a series, but I REALLY hope they make a good job of this:

It got it in the 80's with David Lynch.
Not a series, but Tim Powers "the Anubis Gates" would make a good film or show.

It did and it was a huge wasted opportunity 🙁
Well, yes and no. Lynch was subject to all kinds of interference from the studio and was forced to cut back on his original screen time. Of course, he then went and re-wrote the back story which didn't help things much.
Then there's the long held belief that Dune, as it stands, is unfilmable, due to the length and complexity. The only way to make it work is either as a tv serial or a film in at least two parts. The problem with the second option is there's not enough to interest non fans to stick around for two movies. Audiences expect some kind of conflict/resolution deal at every turn, which rather buggers Dune as a two parter.
Would have been better if they'd stuck to the original story, at least. I have to admit I did like the production design overall.

It did look very nice. But it all comes across as very cobbled together. The Jodorowsky dune would have been very interesting but I think it would have been too dated now to enjoy properly.
I'm holding out some hope for the new film but I know Herbert's son is having a big influence on the themes, which means things like the butlerian jihad are basically gonna have a Matrix backstory.
Could be wrong. I hope so.
The Sword of Truth series by Terry Goodkind! I know it was already attempted and sadly failed, but it could've worked so much better on Showtime or HBO without all the restrictions.
Ross MacDonald's Lew Archer series.
Thomas Pynchon's Gravity's Rainbow.
Ah, one I just thought of...
Vurt. Dear me, that would be something. Vurt, Pollen, Nymphomation. But - obviously - not in that order.
